1) You need a mod to do this for you. AWE mod has a feature for it and I think eXtreme+ too.

2) For the following games:
Call of Duty: You need a mod to turn off pistols and nades.
Call of Duty UO: You can turn nades and pistols off via the Settings dialog>Tab Weapons>Tab All sides.
Call of Duty 2: You can turn nades off via the Settings dialog>Tab Weapons>Tab All sides. Pistols will need a mod.
Call of Duty 4: You can turn nades and pistols off via the Settings dialog>Tab Weapons>Tab Others.
Call of Duty 5: You can turn nades off via the Settings dialog>Tab Weapons. Pistols will need a mod.
